Salty Waffles brings savory potato waffles to the Jordaan

A new food concept called Salty Waffles has opened its doors on Tweede Egelantiersdwarsstraat in the Amsterdam Jordaan neighborhood. Founded by couple Frida Lagler Boehringer and Richard van Rooijen, the shop serves savory waffles built around a base of shredded potatoes.

The concept was inspired by traditional German Reibekuchen, which are deep-fried potato pancakes. Rather than frying the mixture, Lagler Boehringer chose to cook the potato batter in a waffle iron, creating a crisp textured base for various toppings.

A background in pastry

Lagler Boehringer spent fifteen years training and working in Italy before moving to Amsterdam, where she spent five years working as a patissier for premium restaurant group venues. Van Rooijen works as a visual designer and manages the branding for the project.

The store location was selected intentionally to stay clear of high-density tourist corridors while remaining accessible to local residents. The couple completed most of the interior renovation themselves before soft-launching the space earlier this year.

Savory over sweet

The base recipe relies on simple ingredients: grated potato, grated onion, butter, egg, and a touch of cornstarch to bind everything together. Instead of sweet syrups, the waffles are served with savory toppings developed by Lagler Boehringer.

The shop operates in a residential pocket of the Jordaan where retail permits favor small-scale, independent operators. Visitors to the store are often greeted by Stevie, the couple’s five-year-old labrador, who spends time on the shop floor.
