Amsterdam eatery Demetra has earned a spot in the top 10 percent of restaurants globally, according to the 2025 TripAdvisor Traveller’s Choice Awards.
The distinction is based on review volume and ratings gathered from diners using the platform over the past year.
Scratch cooking and pre-fermentation
Named after the ancient Greek goddess of agriculture, the kitchen focuses on traditional Italian dishes made entirely from scratch. Chefs prepare all fresh pasta, breads, pizza doughs, sauces, and desserts in-house daily.
The menu relies on a combination of imported ingredients, such as specialized Italian flour and regional cheeses, alongside fresh produce and meats sourced from local suppliers.
For its pizzas, the kitchen uses a traditional pre-fermentation technique known as the biga method. The dough undergoes a 48-hour proofing process designed to improve both flavor and digestibility.
Water initiative partnership
Alongside its regular service, the restaurant collaborates with the Made Blue Foundation to support clean water projects internationally. Through the partnership, bottled water served at the venue funds clean drinking water initiatives in developing regions.
The local recognition arrives as broader hospitality sector dynamics continue to shift across the Netherlands.
