A Jordaan shop given over entirely to cheesecake. Its founder worked in sports betting and ran a food account on Instagram on the side. There are two styles, baked fresh daily: a silky Madrid version on a buttery cookie base, and a Basque one with a caramelised top and a creamy centre.
